Are you game for seasonal treats?

ELMER Fudd, the bald-headed nemesis of Bugs Bunny, would be right at home at a Cheshire pub this month as the hunting season begins.

But, if shooting wabbits ain't your style, you could still be game and sample some of the season's finest at the Blue Cap in Sandiway.

Head chef Mohsen Moarres has launched a seasonal game menu.

Warm Salad of Pheasant Breast with Watercress and New Potatoes, Bruscetta of Pigeon Breast with Red Cabbage and Creamy Mushroom Sauce and Game, Pistachio and Apricot Terrine with a Spiced Apple Chutney are among the starters on offer.

For mains, Rabbit, Rabbit Pie, Ever-so-slightly Boozy Game Pie and Slow-braised Venison Shank on a Herby Mash are just a few of the dishes on the menu.

'We like to use seasonal, British ingredients where possible and the British game season gives us the opportunity to do just that,' said Mohsen. 'We have had game on the menu at this time of year for the past five years and our customers always seem to appreciate the opportunity to try something a little different.'

According to Chef and Brewer, game is getting more popular in Britain, with the market estimated to be growing by about 11% per annum.

And, as we understand more about game meats, which are tasty as well as low in fat and cholesterol, we are getting more adventurous with our choices.

According to landlord Karen Roper, venison has traditionally been the best-selling game meat at the Blue Cap, followed by pheasant, with game pie a favourite.

Mohsen recommends those who are trying game for the first time might try the Pheasant, Redcurrant and Thyme Bangers while Roast Crown of Partridge on Black Pudding is available for the more adventurous.

Karen said: 'When we launched our first game menu in 1998, some of our customers weren't quite ready to encounter such un-usual ingredients in a pub environment.

'Happily the past five years have seen huge developments in the pub food sector with customers now getting more adventurous.

'We're looking forward to a great game season and to introducing our game menu to customers.'
